What is fresh meat?
Fresh meat does not leave the cold chain until the final cooking step, which is what creates its crispy exterior. It is different from meat flour, normally used to produce dry food, which consists of meat pre-cooked at high temperatures and not stored in the cold chain. Fresh meat, without undergoing harsh pre-cooking processes, retains more of its qualities.
